When we want to get a steak, we come here.

We don’t go to a steak house.  We don’t go to a Teppanyaki place.

When we want serious red meat, Bistro Kato Shokudo is it for us.

Of course this place is fantastic for a lot of other dishes, but today we are here to celebrate with serious steak… As always.

French plate from today’s special.

Recently the owner chef family took a trip to Europe.  France and Basque region of Spain.  Our favorite place to visit.  And they brought back some serious stuff.  We can’t miss this plate.  It includes all the cheese, salami, and Echire butter.

Of course, there’s never enough time to chat about all the good restaurants and bars in Basque.

Housemade smoked salmon with salad.  They let us choose new dressing of yogurt, lemon juice, honey and dill.  Dill was such a delightful addition for the flavor.

This is the steak.  With green pepper sauce.

They use rib eye.  Perfect temperature control to the state of ‘rose’.  So tender.  So packed with rich flavor and juice.

No artificial crap to soften the tissues.

I think the meat weighs close to 300g.  All nicely trimmed.  They trim all excess fats and membrane, and it’s still that big.  I bet the original cut weights about 400g.  And it’s only JPY2000!!!

French dijon mustard is such a nice kick to the meaty flavor too.

I tell you, this is the best steak on the island.
