We’ve heard that a lady who used to run a little organic vegetable store in Okinawa-shi moved and opened a restaurant last year. The lady had such a good touch and a wonderful view about foods that we tried to buy her greens every time we had a chance.
Gotta check out her restaurant.

So there’s no meat, no fish, no dairy, no eggs.
Organic vegetables mainly from local contract farmers. Brown rice is organic from Ishigaki Island. Tea and coffee are organic too.
But later I found that she does use chicken broth and fish broth for seasoning in some dishes. I’m not a vegetarian, I don’t care. But I did suggest her to somehow mark vegan dishes for vegetarians. She said she would.

And she just keeps coming with different dishes!
So her contract farmers just bring in what’s best in the morning. A lot of times she doesn’t know what vegetables there are until she comes to work. She keeps cooking different dishes with what she has to replace empty ones. She has so many cards to throw out to you.
This looks like Caprese, but instead of mozzarella cheese, it’s a tofu. Usually tofu is too watery to do this but she uses a tofu which is dense, less moist, less smelly, a perfect one for this dish.
So the buffet table always has about 10 dishes but it keeps changing. You’d better pace yourself if you want to enjoy different cookings!
OMG, this braised pumpkin was a gem.

It comes with a little dessert and organic coffee or tea.
If you want to get stuffed with vegetables, this is the place. Not to mention, my bowel movement has been very smooth after this lunch. Probably because of all the fibers and enzymes.
If you are a vegan, just tell that to the staff. They will tell you what is all veggies, and most of them are. I hope they will come up with the vegan marking system soon.
