Housemade ham. So juicy and packed with flavor.
All the pork here is fresh from local farm. They buy the whole pig from Ganaha farm and prepare everything themselves. They have specific ways to prepare each parts, especially with offals.
Pork Tongue, JPY1250. This is a must to order when it’s available.
Grill on high heat and let it rest on indirect heat for a minute. So juicy and plump.
Assorted pork meat, JPY1500.
Pork fatty neck. Grill well done to enjoy the marbled meat.
Tenderloin. Grill all sides lightly and let it rest on indirect heat to keep inside juicy.
Yes, yes, yes. Perfect doneness. Soft and juicy.
This is one of our favorites. Pork breast. So plump and tasty. It does smell a little like milk.
Assorted pork offal, marinated.
Pork heart. Similar to liver, but tastes a little more meaty.

This was a treat from the house for my birthday. They are working on it but it hasn’t been on the menu yet.
It’s rectum. Unlike other fatty intestines, it’s more meaty and lots of flavor.
Offals really taste different depending on how it’s prepared. These guys at Manmi really know the stuff and they are willing to do the hard work, washing it for so many times and removing specific layers of tissues.
This is another present, pork heart sashimi.

Pork blood pate is pretty common local food in Okinawa, like in Taiwan.
This is the same pork blood pate in spicy stir fry. I liked this better.
Fascinating match with streamed rice.
One more Ginjo Horumon. It’s a part of the first stomach, so full of flavor, collagen and juicy fats. This is the best.
